Cauliflower Pizza Crust


I have been wanting to try this forever! This is the perfect pizza substitute if you are trying to go gluten free.  I have to admit I was a little skeptical on how it would come out. But the results were amazing, and it has definitely become a favorite!

The ingredients:

  • 1 (small) head Cauliflower
  • ¼ cups Parmesan Cheese (I used mozzarella goat cheese for the whole pizza)
  • ¼ cups Mozzarella Cheese
  • ¼ teaspoons Kosher Salt
  • ½ teaspoons Dried Basil
  • ½ teaspoons Dried Oregano
  • ½ teaspoons Garlic Powder
  • Red Pepper Flakes (optional)
  • 1 whole Egg


  • Take a baking sheet and stick it in oven
  • Preheat oven to 450 degrees
  • Wash and dry the small head of cauliflower
  • Cut cauliflower into small florets
  • Pulse in food processor until you have 2-3 cups of cauliflower “snow”
  • Place cauliflower in a microwave safe container, cover and cook for 4 minutes
  • Place in a dish towel and let cool. Careful- it will be very hot! (I stuck mine in the freezer for a minute)
  • Gather edges of dish towel and start ringing out the water until you get a dry “pulp” consistency
  • Place herbs, salt, cheese, and cauliflower in a bowl and mix (makes it easier if you use your hands!)
  • Add egg and mix thoroughly
  • Form mixture into a ball and place on oiled parchment paper
  • Spread dough evenly maybe about 1/2 in high (make sure all the dough stays touching)
  • Place dough and parchment onto heated baking sheet
  • Bake for 8-11 minutes until golden brown
  • Remove from oven
  • Add sauce, cheese and toppings
  • Put back in oven until cheese is melted and bubbly (about 5-7 minutes)
  • Remove from oven and let cool a couple minutes- this makes sure the crust stays intact.
  • Cut into sections using a knife or pizza cutter
  • Enjoy!
